Wood Varieties

We have 6 wood varieties that will each give its own unique smoky flavour to your chosen dish.

Alder Wood

Alder grilling planks will infuse your food with a ‘gentle & mild’ delicate wood flavour that strikes a delicious balance between a smoky with a hint of sweetness flavour. While it offers an earthy flavour it doesn’t overpower. White fish is a popular choice with. Alder pairs especially well with salmon, seafood, pre-seared pork, poultry, vegetables, fruit, cheeses & desserts.

Cedar Wood

Cedar grilling planks are the fragrance & spice of the Pacific Northwest. The most well-known traditional wood for plank grilling, Cedar has a fragrant, spicy smoke flavour & is commonly used to grill salmon. Cedar pairs especially well with almost all seafood as well as shellfish, chicken, soft cheeses with a rind, mushrooms, tofu, vegetables & pork.

OPTIONS

Cherry Wood

Cherry grilling planks add a subtle sweet, mild & fruity smoky flavour to your food that keeps on kicking. Cherry pairs especially well with salmon, beef, pork, chicken, turkey, venison, peaches, & vegetables. And as one would assume Cherry is the go-to wood choice for those delicious dessert dishes.

OPTIONS

Hickory Wood

Hickory grilling planks have a very distinctive bold savoury flavour that are one of the strongest. Very suitable & favourable for larger cuts of meat. Hickory pairs especially well with beef, ribs, pork, poultry, lamb, wild game, bacon, portobello mushrooms & dark fruits. A good choice for any dish that needs that Southern-style twang & an extra hit of smoke.

OPTIONS

Maple Wood

Maple grilling planks impart a sturdier flavour that can be described as ‘rich and nutty’. Maple has the sweetest smoke of all grilling woods, yet also offers a delicately subtle & balanced flavour. Maple pairs especially well with pre-seared pork, cheeses such as brie with a rind, pizza, small game birds, pineapple & vegetables.

OPTIONS

Red Oak Wood

Red Oak grilling planks have a medium flavour that is perfectly balanced between a mild to strong taste. Works best with main course choices with its smoky full-bodied, sweet & nutty flavour. Red Oak pairs especially well with beef, pork, lamb, bacon, fruits, fish & of course for wild game & other meats that have that distinctive gamey flavour.
